Meet the person behind The Kombucha Table

A curiosity that stayed with me.

There are some discoveries that stay quietly in the background, waiting to return.

For me, it was kombucha.

My journey with kombucha began in Bangladesh, where I was closely connected to the expat community. There was always a sense of sharing — food, ideas, experiences and new discoveries. It was there that I first came across kombucha, something I had never heard of before.

Curiosity led me to explore it, taste it and eventually keep coming back to it.

When I returned to India, kombucha became part of another chapter of my life — until I encountered it again.

That rediscovery sparked something more.

I began learning about the process, brewing at home and, over time, experimenting with different teas, flavours and second fermentations. Almost two years on, brewing has become less about following a recipe and more about observation, understanding and curiosity.

There is always something to notice. A tea behaves differently. A fermentation takes its own time. A flavour combination surprises you.

Some work beautifully. Some are simply okay. And some I never make again.

And that's part of the pleasure.

I don't believe learning has a finishing point. What matters is having enough understanding to experiment with confidence, while remaining curious about what the next brew might reveal.

That spirit is at the heart of The Kombucha Table.

A relaxed, hands-on workshop where you discover how tea, fermentation and flavour come together.

Arrive & settle in

Begin with a flavoured kombucha welcome drink as we gather around the table and get acquainted.

Taste the F1

Taste plain kombucha brewed with black, green and oolong tea and notice how the tea influences the brew.

Understand the brew

Explore the role of tea, sugar and the SCOBY/pellicle, and watch the traditional black-tea brewing method demonstrated.

Brew together

Work in pairs to brew one F1 batch with step-by-step guidance. Each participant receives a 750 ml portion with a pellicle to take home.

Explore F2

Taste three second-fermentation flavour directions — fruity, floral and spiced — then explore how flavours can be combined.

Create your own

Choose from fresh fruits and aromatic spices such as jeera, fennel, cinnamon, cardamom and ginger. Experiment with your own combination, with guidance, and take home 250 ml of your F2 creation.

Before you join the table.

What is The Kombucha Table?

A small-group, hands-on learning experience centred around kombucha brewing. You taste, learn the process, brew with guidance and explore second fermentation.

Do I need previous experience?

No. The workshop is designed to take you through the basics step by step. You don't need to have brewed kombucha before.

How long is the workshop?

The workshop runs for approximately 2 to 2.5 hours, depending on the pace of the group and the hands-on process.

What will I actually do?

You will taste plain F1 kombucha made with black, green and oolong tea; learn about the brewing process; brew one F1 batch in pairs; taste F2 flavours; and create your own F2 combination using ingredients provided at the table.

What do I take home?

You take home 750 ml of the F1 you brewed, with a pellicle, plus 250 ml of your own F2 creation. You also receive printed learning material and resources.

What ingredients can I experiment with?

Fresh fruits and aromatic spices are provided for the F2 activity. The spiced selection may include jeera, fennel seeds, cinnamon, cardamom and ginger.

Is food provided?

Yes. Curated bites are provided during the workshop.

What should I wear?

We recommend avoiding long sleeves, as they may get soiled during the hands-on brewing activity.

Are children allowed?

No. The workshop is for adults only.

When and where is the next workshop?

The next date is announced when the workshop is scheduled. The venue is a central Chennai location and will be published with the workshop details.

How do I register?

Choose the workshop date that suits you and complete the registration form on our website. Once your registration is submitted, you’ll be guided through the payment process to confirm your place.
Your place is confirmed once payment has been received.

How much does it cost?

The workshop fee is ₹1,750 per person.

Can I transfer my booking?

A confirmed booking may be transferred to another person for the same scheduled workshop, with prior notice. It cannot be moved to a different workshop date.

Is kombucha a health drink?

Kombucha has long been associated with various health benefits and has even been described as an “elixir of life.” However, evidence for many of the claimed benefits remains limited, and more research is needed. The Kombucha Table is an educational experience, not medical treatment, and we do not make claims that kombucha can prevent, treat or cure disease.

Anything I should know before tasting kombucha?

Kombucha is a live fermented beverage and may contain small amounts of alcohol. If you are pregnant or breastfeeding, immunocompromised, have a medical condition for which fermented or acidic beverages may be unsuitable, or have been advised to avoid alcohol, please consult your healthcare professional before consuming it. Please do not attend if you have been advised to avoid alcohol.
